Just because we are vegan/vegetarian family doesn't mean we eat boring black beans and rice every night! We have burger nights too and they are oh so delicious! This recipe had black, pinto AND kidney beans in it as well as carrots, onions, bread crumbs and rice. A packed burger topped with tomatoes, avocado, lettuce, ketchup, spicy mustard and even a slice of mozzarella. The buns are toasted Ezekial Buns and our side dish was homemade baked red potato fries. I make huge batches of these and then freeze individual patties to bring out whenever we need them. Sometimes I just heat one up minus the bun and add salsa for a quick protein packed lunch. YUM!
